I’m a big list maker. I can think of a thousand things to do, but I can’t start any of them until I have them all nicely written out on in a list. My favorite part is being able to mark a big black line right through them when I complete the task. Usually, I just find a scrap piece of paper laying around to jot my list on, but eventually throughout the week it’s mistaken for trash a gets thrown away. In an effort to rescue my list from the garbage bin I have put together a weekly to do list that can easily be printed, filled out and hung up at my desk for the week. I wanted to share it with you too so I am making it available to download. After all it is getting to be that busy time of year so we could all benefit from a good to do list to keep us organized and on track!

Finders Keepers: Italian Food

This week’s Finders Keepers is a little different. I found the most amazing bread stick recipe EVER! For some reason I was in a cooking/baking mood yesterday. First I made some apple butter with the rest of our apples from last weekend, and then I was going to start making dinner. I had planned on making my mom’s spaghetti recipe all week and when I finally got around to it yesterday, I realized that the loaf of bread I had bought at the bakery had already started to mold. The only thing better than my mom’s spaghetti is having a good slice of garlic bread with it, so I was super bummed. I quickly got online and searched for the perfect bread to have with spaghetti. I came across this recipe and it was love at first sight. I have never made breadsticks before so I was a little nervous, but these were actually super easy and oh so good. I might have to make them every time we have spaghetti from now on. If you like breadsticks then by all means stop what you are doing and go make these now! You can find the recipe here.
Also, I have one more amazing discovery I want to share with you for your next spaghetti dinner. Instead of cooking your pasta in a huge pot of water that takes forever to start boiling…do this:
This video changes everything; or at least the way you cook pasta. I tried it last night and this might sound crazy, or maybe I was just really hungry, but the noodles even tasted better.

Apple “Picking”

Remember how I was so excited to go apple picking? We had planned all last month to go the last weekend of October; that’s when a lot of the apples we wanted were going to be ripe for picking. We got up bright and early Saturday morning and hit the road. We arrived one and a half hours later only to find out that there was a freeze earlier in the week and u-pick apples were done for the season. I was sad, very sad. But we tried to make the best of it. Instead of picking apples from a tree we picked a bag of apples from a box. They were still better apples than the ones you find in the store, at least that’s the story I’m sticking to.

We spent the rest of the afternoon enjoying the beautiful outdoors and had a nice picnic with our friends. Later that night we made fresh apple pie. It was so delicious. Oh and remember how I thought I would need to round up some friends to help us eat the whole pie? Nope, it’s already gone.

Everything Apples

Apples have been on my mind lately. This Saturday we are going with some of our best friends apple picking. I can’t wait. I’ve been dreaming of it for months and it’s finally apple picking season! I’ve been thinking of all the things I want to make with the apples we pick. Believe it or not Jake is allergic to all fresh fruits and vegetables (yes it’s true), so he won’t be eating any raw ones. I’ve come across these recipes that use baked apples which I think Jake will be able to enjoy a little more. The baked apple oatmeal is first on my list. I’d say that’s perfect for a weekend breakfast and of course I will be baking my Mom’s apple pie recipe. I’m going to have to round up some friends to share it with though.
