WundaBody Challenge Completed

Well my friends I officially completed the WundaBody Challenge I was participating in! It feels good to stick with and complete something. Even though I wasn’t really going into this challenge with a weight loss goal I did end up losing 8 pounds! Who could complain about that (well Jake probably would if he lost weight)!? 
I think I mentioned before that I did this challenge with my friend Erika. It was really great to have a friend to do it with. And it was also really interesting when we started challenging back in the foods that we had taken out of our diet for a few weeks. The first food we challenged back in was gluten. We had gluten with our dinner and poor Erika got a stomachache before she even finished her meal while I didn’t notice anything different. It wasn’t until the third day of eating gluten that I started to feel sick to my stomach and just weighed down. Erika continued to have symptoms when she challenged the other foods while the most I noticed was a feeling of heaviness. It’s hard to describe, but when I didn’t eat the seven foods I just felt better. It’s funny because I kept expecting myself to react more dramatically to one of the foods and I almost felt disappointed when nothing did. Jake had to keep reminding me that that was a good thing. 
Now that the challenge is over I’ve been thinking a lot about how I am going to incorporate all this new information into my day to day life. I didn’t want to do this diet for eight weeks and then completely waste everything I worked for by just going back and eating anything I wanted to again. So I decided that for the most part I would continue eating how I have been the past eight weeks because there isn’t any question that I just feel overall better and healthier eating this way. I’ll eat the other foods every so often, especially limiting gluten to every few days, so it doesn’t have a chance to build up in my body and make me sick. But most importantly I’ll just be listening to my body as it gives me feedback on what it needs and what it could do without. It’s different for everybody, but I think I know a little better now what’s best for me. I’m sure there will be a lot more Roasted Veggie Tostadas in my future. I’m not complaining about that!

Top-Notch Roasted Veggie Tostada (Gluten Free)

When I tell people that I’m doing the WundaBody Challenge one of the first things they ask is “what do you eat”? I can’t blame them though. I thought the same thing at first. Over the last eight weeks I’ve made lots of yummy meals that are dairy, gluten, soy, egg, sugar, corn and peanut free. But today I’m going to share with you my favorite meal (and Jake’s too) that we’ve made. I’m calling it the Top-Notch Roasted Veggie Tostada. 
Here is how I make it, but feel free to get creative and add in or substitute ingredients you like. 
Ingredients
1 red pepper
1 green pepper 
1 onion 
1 sweet potato
1 zucchini
coconut oil
salt
pepper
chili powder
garlic powder
2 avocados
salsa
cooked chicken (optional)
lettuce
brown rice tortillas 
Directions
Preheat oven to 425 degrees. Chop the peppers, onion, sweet potato, and zucchini and put them in a bowl. In the microwave melt 2 tablespoons of coconut oil and drizzle over the vegetables. Give them a good stir to coat. Next divide your veggies between two rimmed cookie sheets. Sprinkle veggies with salt, pepper, chili powder, and garlic powder. Place in oven and cook for 45 minutes stirring every 15 minutes. During the last 15 minutes keep an eye on them. When they start to get a little crispy on the edges they are done. 
While you’re waiting for the veggies to roast you can fry the tortillas. Heat up 2 tablespoons of coconut oil in a frying pan. Once the oil is hot place one tortilla in the pan. Let cook for a few minutes then once that side looks golden brown flip it to the other side and cook. Continue cooking the rest of your tortillas and adding more coconut oil as needed. 
For the guacamole mash up the avocados and lightly season with garlic powder and salt to taste.  
To construct your tostada add a layer of guacamole to the torilla first. This will give the veggies something to stick to. Then top with veggies, chicken, lettuce, and salsa and enjoy!
Make about 4 Servings.

DIY: Dog Bandana

You will need:
  • Fabric
  • Measuring tape
  • Fabric marker
  • Scissors
  • Pins
  • Sewing needle
  • Sewing machine
  • Thread
  • Button
STEP 1: Lay out your fabric flat and from one of the corners measure 15 1/2 inches in both directions. Mark it with your fabric marker.

STEP 2: From the corner you measured, fold your fabric over at your marks to form a double layered triangle and pin in place.


STEP 3: Now cut out your triangle of fabric.

STEP 4: At this point make sure your fabric has the right sides facing each other. My fabric was the same on both sides. Re-pin your fabric so that the needles go the other direction. This will let you sew right over them. 

STEP 5: Using a sewing machine, sew about a 1/4″ seam on the two open ends leaving about a 2″ opening so you can turn it inside out. I found it was better to sew all three corners closed and leave the opening a few inches from a corner. 

STEP 6: Turn your fabric right side out. 
STEP 7: Sew all the way around the bandana again to create a nice finished edged look. 
STEP 8: Fold the corners over one another and sew a button on by hand to hold them together. I’ve done a button hole before but then never ended up using it. It’s easier just to slide it on your pup so this time the button just holds the bandana together and adds a little bit of cuteness. 
This size fits Pixel perfectly. His neck is 13 1/2 inches. You can adjust the measurements based on the size of your dog.
